Our chef has created an inspired four-course menu that honors tradition while showcasing his creativity, with each dish thoughtfully paired by our craft bartender to highlight the bold flavors of the region.
Begin the evening with Salteñas—Bolivia’s famous empanadas—filled with braised short ribs, peas, and potatoes, balanced with a smoky ancho purée. Continue with Aji de Lentejas, a soulful stew of black lentils, bell peppers, cumin, and root vegetables. For the main course, indulge in Pique Macho, a hearty Bolivian favorite reimagined with whipped purple potatoes, brisket hash, a red wine–pickled egg, and tomato confit. Conclude your journey on a sweet note with Buñuelos—delicate donut-style fritters served with dark rum molasses and ice cream.
