Lobster Roll Tartlet

Butter-poached lobster with preserved lemon aioli, chives, and smoked trout caviar

Beet Carpaccio

Red and gold local beets, fried capers, shaved radishes, parmesan, and a bright lemon vinaigrette

Wild-Caught Lobster Bisque

Flambéed with cognac, finished with saffron and basil oil, topped with puff pastry

Seared Duck Rosé

Celery root purée, roasted beech mushrooms, and a Luxardo cherry–orange jus

Coffee-Rubbed Chateaubriand

Potato mille-feuille, garlic oil broccolini, blistered tomatoes, and a chocolate–molasses demi

Deconstructed S’mores

Graham cracker & kataifi crust, Valrhona chocolate mousse, toasted marshmallow & meringue, with candied hazelnuts
